Russian confectioner Olga makes sweets that look like marbled mirrors. “It all began with my love for macarons,” she said. “Later, I began to devote much time to studying confectionery arts. I wanted to learn how to make European mousse cakes. My mirror glaze is the result of my experience.”
After this A&D piece, Olga’s followers on Instagram grew from 15K to 350K+. “I am shocked! What can I reply? My phone can’t deal with all the messages! Ingredients To Make Mirror Marble Cakes:
20 g Gelatin Powder, 120 g Water, 300 g Glucose, 300 g Sugar, 150 g Water, 200 g Sweetened Cond Milk, 300 g Chocolate (White, Milk, Dark, or a combination), Food Coloring
Steps:
01. Bloom the gelatin in the water;
02. Boil the glucose, sugar & water;
03. Remove from heat and add the gelatin;
04. Add the cond milk;
05. Pour over chocolate and buerre mix to remove air bubbles;
Use at 35C/95F.
